White Spots On Chocolate. It has been found that chocolate blooming tends to occur quicker if the chocolate is exposed to very high temperatures. Sugar bloom happens when moisture comes in contact with the chocolate - it dissolves the sugar crystals on the chocolate's surface, leaving a white, powdery look.
Even though fat bloom does not make chocolates harmful to consume but the white specks certainly make it unappealing to eat. The cocoa butter in the chocolate separates and rises to the surface because of changes in temperature. The other spots are sugar bloom.
