Vegan Chocolate Mousse Recipe. Just scoop off the cream, leaving the watery part at the bottom of the can. With the mixer running on low, slowly sprinkle in the sifted cocoa-sugar mixture into the remaining coconut cream until well combined, scraping down the bowl as needed.
Roughly chop the chocolate and place into a large heatproof bowl, over a saucepan of simmering water. Pour the melted chocolate into the mixer with the whipped coconut milk. Break the chocolate into the bowl and allow it to melt, then set aside to cool slightly.
Continue beating until stiff peaks form.
Add the maple syrup, coconut cream, melted vegan chocolate chips, cocoa powder, vanilla and salt to the food processor.
Halve and destone the avocados, then scoop the flesh into a food processor, discarding the skins. Stir until the chocolate has fully melted and all the ingredients are well incorporated. Discard the watery part, or save for another recipe.
