Tres Leches Layer Cake. Fold egg white mixture into the batter very gently until just combined. Separate eggs into the other two large bowls.
In a medium mixing bowl, whisk the flour and the baking powder. Sift the dry ingredients into the first bowl. In a small bowl, mix cream, evaporated milk, sweetened condensed milk and extracts; brush or pour slowly over cake.
In a large bowl, whisk together flour, baking powder and salt.
Poke holes in top with a skewer.
In a separate bowl, beat egg whites and the remaining ¼ cup sugar until stiff peaks form. Whisk dry ingredients: sift cake flour into a medium mixing bowl. Prepare the syrup by mixing all of the ingredients together in a bowl with a whisk until smooth.
