Self-rising flour is basically just flour with baking powder and salt! Beat the butter, sugar, salt, vanilla extract (or fruit zest) and almond extract into a smooth paste. Cake flour is finely milled flour with low protein content, which means that it allows for a soft and light texture.
The higher the protein content the harder and stronger the flour, and the more it will produce crusty or chewy breads.
